Zitumbuwa (Banana Fritters)

Ingredients
- 3 ripe bananas
- 1 teaspoon sugar
- 1/2 cup cornmeal (ufa)
- 1 pinch salt
- oil (for frying)
Directions
- 1 Mash the bananas and mix well with the salt, sugar, and ufa.
- 2 Heat oil in deep pan until it spatters when a drop of water is dropped it.
- 3 Fry spoonfuls of this mixture in the very hot oil.
- 4 Turn to cook on all sides until light golden colored.
- 5 Remove with slotted spoon to paper towels to absorb oil.
- 6 Serve warm with butter and or roll in sugar.
