Mushroom and Leek Sauce

Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, crushed
- 1 small red chile, deseeded, finely chopped
- 1 leek, halved, thinly sliced
- 1 tablespoon plain flour
- 400 g mushrooms, sliced
- 375 ml evaporated milk
- 2 tablespoons chopped fresh flat-leaf parsley
Directions
- 1 Heat oil in a non stick frying pan over medium heat.
- 2 Add garlic, chili and leek.
- 3 Cook, stirring for 3 to 4 minutes or until soft.
- 4 Add flour and cook for 1 minute.
- 5 Increase heat to high and add mushrooms.
- 6 Cook, stirring for 3 minutes or until tender.
- 7 Add evaporated milk gradually, stirring.
- 8 Bring to the boil.
- 9 Reduce heat to medium and simmer for 4 minutes or until thickened.
- 10 Stir in parsley.
- 11 Season with salt and pepper.
- 12 Enjoy!
