Dill Salmon Pita Pockets

Ingredients

  • 1 medium cucumber, seeded and chopped
  • 1/2 cup chopped green peppers or 1/2 cup red pepper
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • 1 (14 3/4 ounce) can canned salmon, drained and flaked
  • 2/3 cup plain yogurt
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
  • 1 teaspoon dill weed
  • 1/2 teaspoon ground coriander
  • 4 pita breads, halved
  • lettuce leaf

Directions

  • 1 Combine cucumber, pepper, onion, celery, and salmon.
  • 2 In another bowl, blend yogurt, mayonnaise, lemon juice, parsley, dill, and coriander.
  • 3 Stir dressing into salmon mixture.
  • 4 Serve in pita pockets or like a regular sandwich with lettuce leaves.
