Dill Salmon Pita Pockets

Ingredients
- 1 medium cucumber, seeded and chopped
- 1/2 cup chopped green peppers or 1/2 cup red pepper
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 1 (14 3/4 ounce) can canned salmon, drained and flaked
- 2/3 cup plain yogurt
- 1/3 cup mayonnaise
- 1 tablespoon lemon juice
- 2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
- 1 teaspoon dill weed
- 1/2 teaspoon ground coriander
- 4 pita breads, halved
- lettuce leaf
Directions
- 1 Combine cucumber, pepper, onion, celery, and salmon.
- 2 In another bowl, blend yogurt, mayonnaise, lemon juice, parsley, dill, and coriander.
- 3 Stir dressing into salmon mixture.
- 4 Serve in pita pockets or like a regular sandwich with lettuce leaves.
