Black Beans and Peaches

Ingredients
- 1 (15 ounce) can black beans (drained)
- 2 large ripe peaches (peeled)
- 1 small red onion
- 1 -2 garlic clove
- 1 teaspoon cilantro
- 1/2 teaspoon red pepper flakes
- 1 lime, juice of
- 2 teaspoons apple cider vinegar
- 1/4 teaspoon salt
- black pepper
Directions
- 1 Drain beans and place in a medium mixing bowl.
- 2 Peel peaches and chop into small chunk and add to beans.
- 3 Chop onion, crush garlic and add to beans.
- 4 Add remaining ingredients and toss gently until well combined. Cover with plastic wrap and refrigerate for 2 hours.
- 5 Serve as a side dish or with tortilla chips.
