Black Beans and Peaches

Time: 2 hrs 10 mins

Ingredients

  • 1 (15 ounce) can black beans (drained)
  • 2 large ripe peaches (peeled)
  • 1 small red onion
  • 1 -2 garlic clove
  • 1 teaspoon cilantro
  • 1/2 teaspoon red pepper flakes
  • 1 lime, juice of
  • 2 teaspoons apple cider vinegar
  • 1/4 teaspoon salt
  • black pepper

Directions

  • 1 Drain beans and place in a medium mixing bowl.
  • 2 Peel peaches and chop into small chunk and add to beans.
  • 3 Chop onion, crush garlic and add to beans.
  • 4 Add remaining ingredients and toss gently until well combined. Cover with plastic wrap and refrigerate for 2 hours.
  • 5 Serve as a side dish or with tortilla chips.
