Spicy Scallop Pasta
Time: 15 mins
Ingredients
- 8 ounces linguine, cooked according to package
- 1 lb fresh scallops, rinsed and patted dry
- 2 tablespoons olive oil
- 2 tablespoons finely chopped garlic (from a jar is fine)
- 1/2 cup fresh parsley, chopped
- 1/2 teaspoon crushed red pepper flakes, to taste
- 1/2 cup breadcrumbs
Directions
- 1 While pasta is cooking, prepare scallops.
- 2 If they are large cut in half horizontally.
- 3 Pour oil in a large sauce pan and place over medium heat.
- 4 Add garlic cook until golden 1-2 minutes.
- 5 Careful not to burn.
- 6 Add parsley and red pepper flakes.
- 7 Stir once or twice.
- 8 Add scallops with a pinch or 2 of salt.
- 9 Increase the heat to high, and cook for 1 minute (or till the scallops are done).
- 10 Turn off the heat.
- 11 In a large bowl add cooked pasta and toss the scallops.
- 12 Top with bread crumbs.
- 13 Serve immediately.
- 14 Serve with a crusty bread and a nice green salad.
