Spicy Scallop Pasta

Time: 15 mins

Ingredients

  • 8 ounces linguine, cooked according to package
  • 1 lb fresh scallops, rinsed and patted dry
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped garlic (from a jar is fine)
  • 1/2 cup fresh parsley, chopped
  • 1/2 teaspoon crushed red pepper flakes, to taste
  • 1/2 cup breadcrumbs

Directions

  • 1 While pasta is cooking, prepare scallops.
  • 2 If they are large cut in half horizontally.
  • 3 Pour oil in a large sauce pan and place over medium heat.
  • 4 Add garlic cook until golden 1-2 minutes.
  • 5 Careful not to burn.
  • 6 Add parsley and red pepper flakes.
  • 7 Stir once or twice.
  • 8 Add scallops with a pinch or 2 of salt.
  • 9 Increase the heat to high, and cook for 1 minute (or till the scallops are done).
  • 10 Turn off the heat.
  • 11 In a large bowl add cooked pasta and toss the scallops.
  • 12 Top with bread crumbs.
  • 13 Serve immediately.
  • 14 Serve with a crusty bread and a nice green salad.
