Diabetic Herb Roasted Pork Chops

Ingredients
- 3 tablespoons fresh lemon juice
- 3 scallions, thinly sliced
- 3 garlic cloves, minced
- 1 1/2 teaspoons dried rosemary, crushed
- 1/4 teaspoon black pepper
- 4 (6 ounce) pork chops
Directions
- 1 Preheat the oven to 400F; coat an 8-inch square baking dish with cooking spray.
- 2 Combine the lemon juice, scallions, garlic, rosemary, and pepper in a shallow dish; dip each pork chop into the mixture to coat completely then place in the baking dish.
- 3 Lightly coat the chops with cooking spray and bake for 15 to 20 minutes, or until desired doneness.
