Amish Baked Fried Chicken

Ingredients
- 1 cut up chicken
- 1 beaten egg
- 1/2 cup milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup cracker crumb
- 4 tablespoons butter
Directions
- 1 Mix the beaten egg and milk together.
- 2 Dip chicken parts in liquid.
- 3 Stir together the salt,pepper and cracker crumbs.
- 4 Dip chicken in dry mixture, using a spoon to cover well.
- 5 Melt butter in a heavy cast iron skillet.
- 6 Brown chicken well on both sides.
- 7 Remove from stove top and place into the oven, cover with foil and bake at 325 degrees for 30 minutes.
- 8 Uncover and continue baking for an aditional 30 minutes.
