Spectacular Overnight Cole Slaw

Ingredients
- 1 medium head of cabbage, shredded (21/2lbs)
- 1 medium red onion, thinly sliced
- 1/2 cup green pepper, chopped
- 1/2 cup sweet red pepper, chopped
- 1/2 cup sliced stuffed olives
- 1/2 cup white wine vinegar
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1 teaspoon celery seed
- 1 teaspoon mustard seeds
Directions
- 1 In a 4 quart bowl, combine the cabbage, onion, peppers and olives.
- 2 In a saucepan, combine remaining ingredients;bring to a boil.
- 3 Cook and stir for 1 minute.
- 4 Pour over vegetables and stir gently.
- 5 Cover and refrigerate overnight.
- 6 Mix well before serving.
