Ingredients
- 6 -7 medium potatoes
- 8 ounces sour cream
- salt, to taste
- pepper, to taste
- 1/2 medium onion, diced
- 2 cups shredded longhorn cheddar cheese
Directions
- 1 Peel and cube potatoes.
- 2 Put in saucepan with water and boil until tender.
- 3 Drain.
- 4 Add sour cream, onion, salt and pepper.
- 5 Whip with mixer until creamy.
- 6 Put into a 9x13 lightly butter baking dish.
- 7 Top with cheese.
- 8 Bake at 350* for 25-30 minutes.
